Beef Log

Beef Log



5 lb ground beefb(80/20)
2-1/2 tsp garlic salt
2-1/2 tsp mineral salt
2 tsp ground pepper 
2 tsp crushed red pepper
5 tsp tender quick salt
3-1/2 tsp mustard seed
1 tsp liquid smoke

Mix all ingredients together with your hands, and place in refrigerator in airtight container for 24 hours. Mix again and refrigerate another 24 hours. On the third day, divide the mixture into equal parts and roll into logs each about 2 inches in diameter. Place on ungreased pan with edge and bake at 150° for eight hours. After they cool, wrap each beef log in foil and freeze until ready to use.
